[Astrl] A Sausage For Kids - Chicken, Mango, & Cranberry

This fresh sausage is for kids, it is almost like a candy bar. It is sweet and nicely balanced. All large ingredients are chopped to a fine size. I bought cheap supermarket chicken mince to try the recipe first but I will get some thighs and make my own mince later to try again. Sorry, no photos yet...

Fat levels

Hi Guys, long time no see. I am trying to convert some of your amazing recipes to halal/kosher using only beef chuck meat. If a recipe says pork shoulder, this means AFAIK 20% fat already exist in the meat. That is if 1Kg of pork shoulder, 200g of fat is there or at least expected to be there. If I ...

I would like to see pictures of your mort with olives and pimentos/capsicum, next time you make it, as I've been meaning to try that. If you like this recipe, you should try salami cotto as well. Mortadella pointed me in that direction. Len Poli's site has a good recipe, but I would recommend incre...

We were at the breakfast table and my wife said, why don't you make something like a mortadella, and I am like "yeeehaaaaa I have the permission to buy more things for sausage making". So I searched the forum and found this recipe. Throw in 1.7 Kg of chux untrimmed, 225g of beef back fat and started...

If you can get a butcher friend to do the mince for you, I think the only equipment necessary is the sausage stuffer. I believe, equipment is something to be used to reduce the time on preperation. When you get older or wanted to spend more time with the family, you need to reduce the time spend on ...

Just so that the people living in Australia know: I talked to CHR Hansen rep and got this info: http://www.mblsa.com.au is selling some cultures mentioned above but we as the Australian sausage makers can not get Bactoferm 600 as CHR does not import any mould cultures. Just another industry regulati...

Purchased a Hark (Australian) brand gas smoker. Cold smoking may only be possible with a ProQ I think. I want to sell this one and upgrade to Masterbuilt Electric in the future. http://lh6.ggpht.com/-9hjiNCl6ikY/TeTYVC-l6UI/AAAAAAAAAQ0/DblT5V3XbhA/s1600-h/Photo_111410_007%5B2%5D.jpg It is working we...
