I have a set of new Henkels that I got a few years ago as a wedding gift. I like them a lot, but I think I'm going to look at getting some older ones to see how the steel compares.

Ross- that cure mix was enough for a lot more than 5 lbs of meat. I cut it in 1/2 since I didn't need so much extra cure laying around and dry rubbed the meat as most of the recipes/instructions had said. I bought 5 lbs of pork belly and cut them into 2 different pieces.
