Glad to see everyone trying this out! It is a simple recipe but I've sure been happy with the results. There really is something to "leaving out all the perfume" and sticking to the basics. Too much air in my sausages

I am looking for some suggestions here....the last batch of sausages I made ended up with too many air pockets between the meat and casing, as well as a few inside the sausages. Any ideas on the cause or a solution? Could it be from too coarse of a grind?

Well I got some racks thrown together this evening. Gave the wood a good coat of waterseal and painted the rebar with the colors I had laying around! Well I got the firebox all finished up. It's got a removable grille of expanded metal to build a fire on....and I put in another vent below the grille so that I have another way to control air intake. I think we are about the same. I was hoping mine would do like my other smoker and allow me to adjust the dampers to control the heat but no matter how big the fire it still just wouldn't budge. The other smoker is about seven feet from the firebox and I can get it up to 350 or so if I won't or tur...
