Thanks Chris, appreciate it! My cabinet works great but I have come to the realization that I don't like the mold flavor that accompanies the dry curing process. My chamber is so good at producing M600 mold that I just cant get a product to not have pure white mold on it! And I have been making a to...

Selling my charcuterie chamber
Moving and selling my charcuterie chamber. Chamber runs fantastic, no issues whatsoever, has full temp and humidity control, etc. Always had pure white M600 grow in the chamber, never an off color mold. Has air exchange fan, lights, etc. This is a fantastic chamber for curing and drying. Plenty of S...

Chris is correct....books are great but actually making sausages, curing meats, etc will get you up to speed much faster! Don't be worried about making mistakes along the way, is hats how everyone starts! Just make sure your cure % by meat weight and and your salt content are correct, and your sugar...

My fresh Mexican Chorizo recipe
I have been making fresh Mexican Chorizo for many years, and thought you all might like to try some yourselves. This is my go-to recipe and is extremely tasty! Pimenton de la Vera is what I use, and it makes a great addition to this chorizo! Guajillo and Ancho chiles give it depth, flavor, and fanta...

Paul, Laftpig, There is a simple solution to your wobble issue....simply make a spacer the same thickness as the blade, install when using kidney place, and problem solved! Stack washers together, or get a shaft spacer from your local hardware store, etc. Not a difficult problem to solve! Best of lu...

Crazy question, I know....Philly cream cheese in sausage?
Going to do some experimenting with fresh sausages, and wanted to know if anyone has added cream cheese (like Philidelphia Cream Cheese) to fresh sausages? Or is there a firmer cheese that would mimic the cream cheese taste, but not go completely gooey in texture? I am thinking maybe substituting fe...

I suggest you put the fan in the dooor, not the side, top, etc. The door has no electronics and no freon pipes, etc so you can modify without worry. No reason to cut a hole in the fridge body itself. When I made my curing chamber I drilled a hole in the very top corner of the back of the fridge, ran...
