Thanks for the suggestion. I am basically using the Marianski recipe, although I have tweaked some of the spicing. More anise, black pepper, and hot pepper. I am using insta cure #1. I fermented at 90' and 90% humidity for 36 hours.
I had just bought the cure. It had not even been opened yet.
Meat and fat were ground with a 3 mm plate. I stuffed into a 1 1/2" fiberous casing.

Melted fat is pooling at the low points. But there still seems to be fat through out the sausage.

... and the fans? Did you find those at your hardware store also?

The only thing that I have so far on the web is a fan that moves 51 cubic feet per minute. My box is roughly 12 cf so I think that is too much air movement.

Air speed for drying

In Marianski and Marianski they talk about air speed for drying. They suggest a speed of .1 to .5 meters per second.

when I search the web for slow speed fans, the technical detail is stated in cubic feet or meter per unit of time.

Any suggestion on a good slow volume of air for fan?

Thank you that does help. As written the recipe was puzzling, but a typo on either the drying time or size of the casing, both explain the time difference. In the end I will be using weight loss as my guide.
