That's a pretty impressive build, congrats! I was thinking of putting my own smokehouse together as soon as I get myself some of this Costa Blanca property for the holidays, but I still have much to learn... Which is fortunate, as I'm not going to move until next October.

I think it would be worth it to try and add some smoked paprika as well, it'll change from the "actual" salami recipe but will give it some extra personality.

Good to know, I didn't know you could simply put the cut stuff in the refrigerator for such long periods of time. But then, we began curing meat so that it would be easier to keep for extended periods of time, so it makes sense...

And would there be an alternative to Lutron pH testers if possible? If they're the kind of tool that can break easily, I'd like to check if there's a more rugged alternative before investing in a set of electrodes.

Now that's a success story, I didn't know you could get orders from hotels and restaurants by making salami in Thailand... It looks like I've chosen the wrong career but on a more serious note, that's quite the impressive feat, congrats on "making it" through sausage making.

Okay, thanks, I was looking to do salami myself as well and ran into conflicting info regarding the proportions of everything, especially with the different sorts of peppers being used.
