Thanks Norcal have seen those, I think the original starded off looking something like that but it has evolved locally.

When I get my hands on it I will make sure to post it here.It is chunky and you use pork and beef thats about it.

I have been wanting to try my hand at salami for a long time unfortunately right now I am over my head at work so have very little time for any thing
