If it's inside a fridge that has a auto defrost that will suck the remaining moisture out of your pastrami in no time at all. I have had some summer sausage I found at the ...

For anyone who is interested in using natural cures based on celery products, some excellent work has been done by Prof. Joe Sebranek in the Dept. of Meat Science at Iowa State University. A forewarning - the references noted below are academic in nature and are not the easiest reading (lots of $50 ...

what will you do when your cold winter weather prevents you from going outside with the water thing? No need to go outside, run this thing in the kitchen. Here are some links from the fellow who builds these things. He also built a mixer. Every thing he builds is top notch and will do large loads. ...

I almost got a 5lb vert. stuffer, but heard about a guy who builds his own hydro-powered horiz. tube stuffers. I was intrigued enough to have him send me the plans & some of the machined parts that I'm unable to create, and built one from parts I located at the local hardware stores. The 'Kirby Can...

The Danby Microwave Cold Smoker Adapter Kit

Nothing special about my smoker, just a 4 rack digital bradley. Made a cold smoke adaptor for it. Made this up with a broken microwave from work. The recycling places are full of these things. All you need is a dryer vent hose and some short pipe connectors. A good pair of sheet metal cutters and a ...
