Toby

I did use Roxul. I used the batts and they are fairly rigid, much more rigid than fibreglass. I found you can cut it to the correct thickness real easy using a regular electric carving knife.

Toby

I agree with the other guys. One of my big smokers is 100 % aluminum on the interior and has never been a problem. In fact it started life as a commercial proofer so I certainly don't think its a problem at all.

Toby On one of my big smokers, it started life as a proofer, it had been stored outside. It had fibreglass insulation but it had got wet. I had to drill out all the rivets to remove enough panela off the outside to reinsulate it with mineral wool. The only problem I had was the bottom. There was no ...

Toby I would be real interested in seeing how things progress. That is one fine looking cabinet! I looked at the link you provided and it would appear the insulation is polyurethane which is the only concern for me. Is it possible the cabinet you have is older than the link you provided? If so, mayb...

Toby They both run the same 3000 watt 220v element. Also both cabinets are insulated. The one with the glass door has fibreglass insulation and the other has mineral wool insulation. The inside measurements of the one with the solid door is 21.5 inches wide, 28 inches deep, and 61 inches high. The o...

Thanks Toby and Chris! Like I said I just ordered supplies from Halfords in Edmonton. I thought the shipping might be a bit less simply because it's closer. I'll definitely try Stuffers next time. JB's is handy being only 40 minutes away but I agree they are pricey and don't have everything I'm look...

Mike Great looking setup, yeah the baffles/drip tray is super important. The last thing we need is a grease fire in our smoker. So your extraction fan turns on when the RH is greater then your high end setting on the controller? I dont have that option on my plug and play so I was just going to hav...

Toby I missed your question regarding the elements. No, I don't think there is a difference between the top and bottom elements. Different elements may have been designed with higher or lower watts per inch but the ones I use happen to be top elements. This was more to do with getting the phisical s...

Redzed That's the same thoughts I had regarding traditional drying. My cabinet stared life as a commercial freezer with a top mount compressor. It has a built in fan to circulate the air in the cabinet. I had to rewire it to come on when the compressor cuts in because it was thermostatically control...

Stuffers prices for natural casings are lower than Halfords and hog casings are lower than the American retail suppliers. Mondostart 2M is also nearly 20% less. Redzed I'll have to remember that for my next order. I usually get casings from JB's in Regina but to my knowledge they don't have any sta...

Hi Jan First off because I'm new here if I'm stepping out of line and not following protocall please remove my post or move it. I probably shouldn't be hijacking Toby's thread. Here is a controller set up I have used in a couple of different smokers. http://img.photobucket.com/albums/v158/mmike/Fish...

I just ordered the Mondostart 2M and the SP from Halfords in Edmonton as well. I'd be interested in any information anybody could provide on the usage of this product as well. Anything from batch sizes and amounts used to what the final product was like.

Thanks,
Mike

Tobertuzzi Here's the HUmidity controller from Auber that I'm using. http://www.auberins.com/index.php?main_page=product_info&cPath=37&products_id=263 The advantage is having the ability to glance at the controller and see both hte set value and the actual value at the same time. Also, if the humidi...

Hi Tobertuzzi I've been working on converting a commercial freezer into a dry cure cabinet as well. I worked with Suyi from Auber Instruments to come up with a controller that will both add humidity and remove it simultaneously. The dehumidity circuit is exactly that style of fan which vents to the ...
