To echo their thoughts, 1.5% should be a good place to start. I'd be surprised if you found that to be too salty.

Also, I think you should reconsider... You can NEVER be too elderly to start making sausage!

I did almost the same exact thing years ago. I knew I needed to convert the recipe, but was in a rush and totally forgot to do it. I realized it the next day and threw it out. To me, it was not worth the risk for a $30 piece of meat.

I can't tell from the picture, what is that against the back wall at the top of the fridge? Is there no freezer portion to that fridge? Honestly, I wondered that myself. They must just escape past the seal. But then there's another seal around the outside cover and that one seems like it would be air tight.
