I have read several sausage making books, and none of them come close to Home Production of Quality Meats and Sausages! I also own The Art of making Fermented Sausages and it is just as good! I am now able to use new techniques to make me a better sausage maker. Thanks Stanley and Adam!!

I am trying to find a computer fan for my curing chamber. In my book "The art of making fermented sausages" they put a emphasis on fan speed. Example .8 m/sec. I came across this web site on how to calibrate a hygrometer. It is nice cause it is easy to do. Just wanted to share with everyone. We all know how important it is to have accurate RH readings when making fermented sausages.

I totally agree with Chuckwagon. That is why I like to post recipes because I love to have other people's opinion. It makes me a better sausagemaker. Even if it was my own recipe it would not bother me. Thanks Charlie for your input. I will try your suggestions when I try this recipe.
