I like the idea of using the water bath to finish the sausages. I have been looking at Nesco roasters online. They all seem to only go as low as 200 degrees. Is there one that anyone recommends that will go as low as 165-170 degrees?

Smoked Turkey for the New Year?

I had a last minute idea to smoke a turkey for dinner tonight. I am smoking between 250 and 275 degrees. I am trying something new and putting the turkey in a disposable roasting pan inside my smoker to collect the drippings to try and make gravy. I was wondering if any other members have tried this...

Very good brisket summary! This will help me when I do my next brisket. You put it perfect on falling off the bone tender. My first time doing a brisket mine was tender, but dry and overcooked, not what I wanted. I have never tried foiling. I will try that next time. As always thanks Chuckwagon!

I would suggest finding a gear motor. They have a lot of torque and you don't have to use pulleys or belts. You just have to find a flex coupling for connecting the grinder to the motor. A guy I work with gave me the suggestion for the gear motor. I am going to try and motorize my sausage stuffer. H...
