Thanks Norcal have seen those, I think the original starded off looking something like that but it has evolved locally. :smile: When I get my hands on it I will make sure to post it here.It is chunky and you use pork and beef thats about it. :sad:

I have been wanting to try my hand at salami for a long time unfortunately right now I am over my head at work so have very little time for any thing :sad: But i think it is a brilliant idea and will follow, if I do get a chance will bail in at some point. :grin:

Thank you to everyone who made this possible.I took the calander over to my friends mom with some sausage she was as you can see over the moon.( She turned 95 in Feburary.
