Apple, cherry, alder, even hickory work well in my opinion. Your mileage may vary....

Ok. I may have made some deragotary statements about sweet smoked salmon called by the misnomer "Indian Candy". So to demonstrate my open-mindedness on this controversial method I made some yesterday. About a month ago I got a nice 12lb. ocean fresh chum salmon (a.k.a dog salmon, keta), I filleted it an threw it into the freezer. Did not know what to do with it since it's mostly suitable for smoking and not much else.

Anyway, it's disappearing fast, my friends can't stop eating it and I don't think too much will end up in the freezer. Anyway, I don't like it.

Hi Red,
If you fronted up with a plate like that to me, I would eat the lot and even lick the drippings of the plate. Not very gentleman like but at my age I just don't care anymore.
You are just SPOILED not liking this Indian candy.

It looks like you did a wonderful job on it. Too bad you don't enjoy the fruits of your own labor... cause I sure would. LOL
It looks terrific, I bet all your freinds are really glad to see you pass on it when they come over, and appreciate it that you took the time to make it.

That invitation sounds great. I'll bring a bottle of my own "bison grass" vodka.
Who knows what the future holds. I have a good Polish mate here and he wants to come as well after seeing your photo of the salmon candy.
Can you handle two old fools to visit you.

No problem, I'm easy. Having guests always presents an excuse to drink more. If anyone would throw you out it would be my wife. She strictly enforces the 3 day rule with guests. :lol:
