After resting overnight I just tested them and they are good. Very good. The flavor is really complex but all in balance but your taste buds go all over the place. I'm not sure what you'd call these things since its an adulteration between BBQ'ing and charcuterie but I really don't care because they suit me just fine.

Just call it good food. CW likes to cure his spare ribs and then smoke cook them so there is legal precedent.
