Can anyone recommend a good reference or two on cooking substitutions in general?
Sure! El Chuck-O wrote:
My buddy sent this recipe,
He said I couldn`t beat it;
He sure don`t know a thing or three,
I couldn`t even eat it! :mrgreen:
Now you know why I'm so paranoid about substitutions. :roll:

Early in our marriage, my wife and I hung out with good friends who both were excellent cooks. Naturally, we wanted to learn too. Creativity is involved here, so after downing the brandy part of a brandied cherry sauce recipe and casting off inhibitions, we jumped right in, forgetting the other important requirements: experience, tempered by good sense.

Forty some odd years later, I still get teased about my creation- - Kahlua mushrooms. Both ingredients are still quite good. However, experience dictates that they be separated by a day or two. As for the good sense... uh...
Experience - the ability to instantly recognize a mistake when you make it again.

Maz ol' friend,
I'll send you my poetic recipe for "Granny's Fruit Cake". It was published. Watch yer' mail.
If it looks like a duck, walks like a duck, and quacks like a duck, it probably needs more time on the grill! :D
