Well, the 4th of July is over for another year. I saw so many fireworks that my eyes went crossed! Hey, did you folks realize that only two people signed the Declaration of Independence on July 4? Yup, John Hancock and Charles Thomson. Most of the rest signed on August 2, but the last signature wasn't added until 5 years later.

Good evening, all.
Just thought I'd drop everyone a quick line. My name is Mark and I'm from Milwaukee, Wisconsin. I'm married with 3 wonderful daughter. I'm a Plumber by trade for 12 years. I was raised in family sausage making and has become just shy of an obession. I know my way around the grinder, stuffer and smoker. I'll just close by saying I'm happy to be on here wanting to learn as well as give some info that I have learned.

Hey shafer, I've got to tell you a story. When my lawn mower broke and wouldn't run, my wife kept hinting to me that I should get it fixed. But, somehow I always had something else to take care of first, the shed, the boat, making beer... Always something more important to me.
Finally she thought of a clever way to make her point. When I arrived home one day, I found her kneeling in the tall grass, busily snipping away with a tiny pair of sewing scissors. I watched silently for a short time and then went into the house. I was gone only a minute, and when I came out again I handed her a toothbrush, and said, "When you finish cutting the grass, you might as well sweep the driveway..."

The doctors say I will walk again, but I will always have a limp.

They are known to sleep-mate for life. And did you know that otters hold hands when they sleep? Yup, they do it so they don`t drift away from each other. Now, if you think that`s a little odd, get this: Except when breeding, the Common Swift spend their entire lives in the air, living on the insects they catch in flight. They drink, feed, and often mate and sleep on the wing!

Thanks for the welcome, and yes, I do live in Zambia at the border with Zimbabwe, right on the banks of the mighty Zambezi River. Boating and fishing are 2 of my hobbies. The other ones obviously are eating and cooking, if I may be so bold to include curing, smoking etc under the "cooking" heading....
I will most likely be harrassing you all with questions about (food) smoking in a hot climate in the near future.

Sambal, This week in the eastern half of the USA the night time temperatures have been about 30°C and day times it has been close to 40°C But we do have air conditioning systems in our homes.

Sambal, do you make Bor Wors? ( or Boerewors). Our member "Bubba" is from your neck of the woods and he`s one of the nicest people I`ve ever met! He won our monthly sausage contest with his recipe for South African Boerewors. He called them Bubba`s Boerewors, and they are tasty, tasty, tasty! We also have "Maz" right next door to you. He makes Bor Wors also. He and I go way back. Shucks, we even went to different schools together! You must like Indonesian food, like me. Am I correct?
One thing got me wondering though, the flag!!!, Red, White and Blue. This goes hand in hand with the Orange one. It certainly is not Zambian.
Do I notice some Kaaskop influence?

Thanks for the very warm welcome, everyone. I might just feel at home here :lol:

I am Dutch, hence the red/white and blue flag, but I live in Zambia. Thought that would confuse a couple of people!

I love Indonesian food, actually all SE Asian food. What's life without garlic and chili?
I haven;t tried making boerewors yet, although I eat a fair amount of it. We do make biltong though and will pretty soon try our hands on dry-wors.

ssorlih: those temperatures look like our October temperatures, although you may add an extra 5 oC. No cold smoking in that month, that's for sure!!

We have two new members with us today.
Paci is from Perth, Australia and Gumbalarth is in Madison, Ct. - That`s Connecticut to those who don`t know! Hey now.... Connecticut is pretty famous! Especially for their sub-marine pens in New London. Without these facilities, we would not have won World War II. Yup, you can check it out for yourself on the internet. Welcome aboard Gumbalarth!
And now a word about "down under". The Australian folks of WWII should always be remembered too! This is a nation of heroes! Without these these folks, we would be in a world of hurt! And probably speaking some other language! :shock:
