CW, it is great as a beer skate, and I use it as an ingredient in dishes. If there is any interest in this, I'll post recipes, and I'm sure Gulyás will do the same.
Buon Appetit !
Please post recipes, both of you. I'm not sure what the best way is to eat it, once it's made. I presume there's a poached recipe, a grilled recipe, plus various ways of cooking dishes using the csabaii as a flavorful additive. With all the effort involved in smoking it, there are bound to be some worthwhile recipes which really show it off.

Back in my chemical plant days, the "graveyard" shift often made pinto beans with sausage during hunting season. ...simple recipe. ...bet it would be good that way, too.

People don't understand that now we're retired, you wonder how you had time for other things before.

Hey Mr. el Ducko.

Ones in a while I get lucky. I don't have to write you a recipe, because I found one on the net in English.
This is the better one.

But I link in this one too.

And this is a different dish, but the sausage is missing from this, that should be in it.

Spot on ElDucko ! Usually the simpler the better.
Grilled, barbequed, or added to potatoes, which are peeled and quartered, with sauté onions a bit of sweet paprika and some stock/water to cover, cook to tender, one pot wonder.
Cut into 2" pieces, added to sauerkraut and potatoes, simmer until cooked with a little water added, a simple flavourful dish.
Add to any vegetable based casserole to lift the flavours.
Any kind of bean dish will be a match made in heaven with this addition.
Simply grilled, put into a split bread roll with onions and your favourite sauce.
Sliced on some bread, melt cheese on top, serve as a snack before dinner.
My guess, once you get the taste for this sausage, uses will present themselves.
Gus

What do we do with the eggs?
"Potatoe (sic) Casserole" obviously she must have gone to the same school as former VP Dan Quayle who once corrected a kid in a spelling match by adding the e to potato.

The eggs are sliced, and added in a layer.

You are right Ross. The recipe doesn't say what to do with the eggs.

Maybe I should have written one after all.......
