I know Lou has some prosciutto on the horizon and I just thought I'd suggest something that I found was a terrific use of prosciutto. Granted, this isn't one of those neat dishes that has much eye appeal but what it lacks here is more than made up for in flavor.
Prosciutto Poppers
Slice some prosciutto thinly and place in a won-ton wrapper along with some sharp cheddar cheese. With wet fingers, take the corners of the wonton wrapper and twist the wrapper into what would look like a Hershey's Kiss and drop in 350F oil and fry just till the wrapper is done and remover from oil and enjoy.
I can pretty well guarantee you nor your friends can eat just one.

Here's another variation/use for prosciutto. Jalapeno poppers. Core jalapenos and remove seeds cut in 1/2 or 1/4's depending how big they are, spread some cream cheese on and wrap with prosciutto. Put on cookie sheet and pop under the broiler for a few minutes!! dang they're fantastic.

Both sound great, but you are forgetting the wine pairing!
Happy New Year!

Yes, a good wine is important. My favorite is blueberry.
Here is a proscuitto popper. These are like mini-ham and cheese sandwiches on steroids. So simple yet so good.
A year old proscuitto

Beer works too!
This worked wonders last night. I think it was youth nectar because after drinking I felt rather spry and was ready for anything the New Year could hand me but I do think it reverted my age back to a point where driving a vehicle was out of the question.
