Instant cure S

Post by sambal badjak » Fri Jul 26, 2013 10:16

I managed to find some cure from Freddy Hirsch (a South African supplier) and it is called Instant cure S?
Does anyone know it or how to work with it as the infoon the package is not very clear.
It contains:
Salt
Dextrose
Sucrose
Curing agent (salt preservative Sodium Nitrite)
Sodium carbonate
Colcurant
MSG flavour enhancer
Spice extract.
No percentages or anything like that are given. The only other info is: Dosage: 1.3 kg per 10 litre water.

I am at a bit of a loss at how to use it (except obviously when I would make a brine)
Could I use it as a dry rub as well?
Does anyone know the stuff? And/or knows how to work with it?

I am on a quest to find nitrite salt but so far no luck.
I am one of those people that way prefers to make her own mixture, thus knowing exactly what is going on.
life is too short to drink bad wine (anonymus)

Hi Anne-Marie,
I believe that the Freddy Hirsch range of spice and/or cure mixes is made by Crown National
in South Africa. Just Google their head office email addres, either Jo-burg or Pretoria.
Many months ago I emailed them with a request for information in regard to their Biltong spices. They replied super fast.
A great company with some fantastic products.
Good Luck,
Jan.
