Best pork trim for brats

Post by Blackriver » Thu Feb 23, 2012 21:16

I want to buy pork trim, I have to choose between a box that is 50 percent fat and the other box is 30 percent fat. What is the best for making brats for grilling?

If that was the two choices that I had, I'd go with the 70/30 although I prefer to use 80/20 for my Brats.
I thought I had a handle on life until one day the handle fell off.

I don't know what you pay for your trim, but for me the most economical meat for sausage are Boston butts, I get them by the case lot from Sam's club for about $1.35/lb sometimes even less. They are around 25% fat.
