Casing length??

Post by Blackriver » Sat Apr 06, 2013 21:43

I know I have asked this before but I cannot find the link. Chuckwagon gave me a formula to figure out how much length of casing I need for whatever pound of meat I am using. Can anyone point me in the right direction?

In Metric:

L = 3300/d^2

where

L is required length of casing in meters per kilogram of stuffing

d is diameter of casing in millimeters

In Imperial:

L = 7.6/d^2

where

L is required length of casing in feet per pound of stuffing

d is diameter of casing in inches

Example 1:

32 mm casings:

3300/32^2 = 3300/(32*32) = 3300/1024 = 3.23 meters per kilo stuffing (approximately)

Example 2:

3/4" casings:

7.6/(3/4)^2 = 7.6/(9/16) = 13.5 feet per pound stuffing (approximately)

It's obviously going to vary, sometimes greatly, depending on how densely you stuff, the length of the links and length of the twist when linking.
Godspeed!

If it looks like a duck, walks like a duck, and quacks like a duck, it probably needs more time on the grill! :D
