Casing Source

While doing a search on specialty casings, I found these folks.

Natural Casing Company
P.O. Box A
410 E. Railroad St.
Peshtigo, WI 54157

Anyone know anything about them? Do they sell to us home sausage makers?

You could contact them but it looks like they sell to large manufacturers.

I have been looking for these casings for a long time .........they are how liver and other wursts were cased in the (not so) old days.

Never tried those Rick but the natural Genoa casings from them are great....but pricy

I have heard on other sites that they do sell to us. But they don't do any web ordering you have to call

I know that I am on the OTHER side of the world to most of you on this forum but I am in need of help if there are any of you out there in South Africa.

While my salamis are hanging and a few weeks out from being done I want to turn my attention to making coppa/capocolla. I've found myself some fine acorn fed pork but trying to find a beef bung or even collagen casings of the required size is proving IMPOSSIBLE!

I'd be grateful for any help or advice I could get from all of you Charcuterie mavens!!

Try UMAi bags for a starter if they are available in SA or Banquet bags in Australia, available from www.smokedandcured.com.au.
Both bags are manufactured by the same Danish factory. Both suppliers ship worldwide.
I have used them with great success for Coppa, Loin and Bresaola.

I order from Natural Casing Co regularly and while I've been using the casing in a commercial setting I didn't set up an account, just called and ordered. They're super friendly and helpful and I don't hesitate to recommend them.

Butcher and Packer also sells great stuff, have ordered from them and had no issues.

Most recent order of semi custom casings was from http://www.butcherspantry.com Same as other two, no issues!
