Controller recomendations

Post by oops1215 » Tue Jan 01, 2013 21:09

Just picked up a refrigerator to build a curing cabinet. Anyone using a dual heating/cooling thermostat or humidifier/dehumidifier controller?

I purchased this unit, had it wired so that I can cool or heat, but so far I have not used it.

Initially I thought I might have to locate the curing chamber in a colder environment and would need heat but in the end there was no need.

I installed the CAP AIR-2 Atmosphere Temperature/Humidity Controller, and modified it to run a humidifier rather than the default de-humidifier.

I am new here and found the site searching for Kassler Ham. I used Bubba's recipe for a Kassler ham on Thanksgiving. I saw in a post someone was wondering where he had been lately. Where ever you are thanks for the recipe Bubba! I thought it turned out great, a good ham taste, not too salty and made some great ham on rye sandwiches. Here are some photos of my cook. I smoked it on my Traeger pellet smoker, used Traeger oak pellets and supplemented some apple wood smoke with an amazin tube smoker.

Allen,
Our buddy Bubba was transferred to Alabama from Georgia. He just got set up there and had to make tracks to another location temporarily. He is pals with CrustyO in Australia and he wrote a note to him the other day saying he would be back soon. He is a true gentleman and a great guy that everyone takes an instant liking to. He'll be back soon and you can chat with him yourself.

Best Wishes,
Chuckwagon

A very good dual temp controller, such as Control Products TC-9102D-HV Dual Stage High Voltage Digital Temperature Controller works well for me. Details can be viewed here: http://www.amazon.com/gp/product/B0057A ... UTF8&psc=1 As far as a temperature and humidity controller all in one unit, I use this one, albeit a bit pricey: http://www.amazon.com/Night-Temperature ... controller

Redzed how did you modify the CAP AIR-2, I just bought one.

I followed the instructions on that site. Printed them off, folded up and put into the controller if I ever want it to run a de-humidifier.

Works great, except the temp and humidity markers mean very little. I set them according to my thermometer and hydrometer.

Here's a link to the unit I just built. Although I haven't ran a test batch through it yet it is maintaining levels nicely.

Mine ran perfectly when I did a dry run. When I load with fresh product, the humidity is all over the place, eventually stabilizing with minimal swings after about 2 weeks.

Sorry for going off topic here CW, I was reading this topic because I'm building a larger smoker and looking for a good controller, and came across this chat. :)

Thanks REDZED that was good info. the humidifier part should work fine. My problem will be to figure out which wires to switch to turn the heat on. My room is already cold being under ground so I need the heat to come on rather than cooling.
