Nice looking Kabanosy. I'm sitting by the campfire right now , on the far west coast of BC and sure could bite into one or two! Did you use sheep casings?

and yes i did use sheep casings, i was expecting all sorts of problems as i been reading that they are a lot harder to work with than the pork casings but it was not hard at all, easy almost, saying that it was first time i used my vertical sausage filler that got here from ebay few weeks ago so that might helped a little.
gave most of it away for family and friends to try and now they all asking for more and few extra sticks left in a fridge that i was going to give away as well got eaten up by my hungry child....

in other news i got myself pork belly and loin was going to make polish smoked "boczek" and smoked "poledwice" but i noticed that all the recipes for "boczek" list saletra as pickling agent, how the hell does one convert that in to cure#1 without messing it up? any tips for newbie would be great.

Hi Croc.

Great that your Kabanosy are a hit. Using sheep casings makes them wholly genuine. Just recently I read an older post by Dziadek the resident expert on the Polish site, where he reminisced about the 1960's when there were no artificial casings available. He wrote that that sheep casings actually do affect the flavour of Kabanosy giving them a unique flavour. He wrote that he always poached couple kabanosy after stuffing and before smoking and they were delicious, with that aroma of mutton in the air.

If you post the links to the recipes for boczek and polędwica, I'll convert the curing amount for you from saletra (salt peter/nitrate) to cure 1. Alternatively, use the amounts of salt and cure provided by Stan Marianski on this website for bacon and Canadian bacon, and do everything else according to the recipe you have.

i think i got it sorted for now, see how it turns out :)
had a headache all day so i'm lagging with my smoking, was going to make 4kg extra of kabanas today/tomorrow but now i'm not going to get a chance till tomorrow night.

is this too long to keep meat (pork shoulders) in the fridge before starting mincing, seasoning considering i got them on friday (fresh from good butcher)?
