HELP HELP!!! Need to cook some sausage for a vegetarian!

Hello to all on the forum!

I am in a bit of a fix...

Each year in March, quite a few old friends get together for a mini cook. We all gather around at a host's home or property, bring our own cooking apparatus, and cook items that one does not normally see in everyday life. In the past we have seen everything from crow to Zebra meat cooked during one of these gatherings. Each year has a theme. This year we have all decided that the meat of choice will be sausage based.

14 of us (myself and 13 others) are having a sausage fest of our own this year and need to feed a few wives that are vegetarians.

ALL of the other guys have stated that they will make a side dish or something to please the veggie folks, but I want to make a TOTAL vegetarian sausage for them. That means NO animal products what so ever in the link!

Does anyone have an idea about this? I know that the natural casings are out of the question, and the collagen are as well since they are made from animal byproducts.

I need a vegetarian sausage recipe, AND a vegetarian casing; is there a veggie casing?

Any help or advice will be appreciated!

Here is a recipe for veggie burgers fron DEEJAY Deb, I would make this mixture and stuff into veggie cases from "The Sausage Maker " in Buffalo

Deejays Spicy Veggie Burgers

2 cups Black Beans
2 cups Lentils
2 cups Black Eyed Peas
2 cups onions
2 cups carrots
2 cups cabbage
2 tablespoons Deejays All Purpose Rub
2 Tablespoon Hot Italian Sausage Spice
1 teaspoon Worcestershire powder
1 tablespoon course black pepper
1 tablespoon granulated Garlic
3 eggs
4 handfuls Italian bread crumbs

Soak beans until doubled in size. Boil beans until tender then drain and rinse. Mash Black eyed peas and Black Beans with a fork to break them up. Leave Lentils whole. Throw carrots, cabbage and onions in food processor until almost a pulp. Mix all ingredients. Add just enough bread crumbs to make mixture hold together Stuff into veggie casings , fry up. I've never made these so no Idea what they would be like.

Cranky, I am unsure of a tried and true vegetarian/vegan sausage. I did find quite a few by searching with google tho. As for the veggie casing-The Sausage Maker carries them. Here's a link

I've never made these so no Idea what they would be like.
Well, just asked the wife if she would like to try the recipe and she agreed! :mrgreen:

I'll make a half batch this weekend in natural casings and see how it goes.

If all works well, I'll order veggie casings next week.

I really appreciate the assistance and will post pics and results of the test.

Recipe of quite famous "kiszka ziemiaczana', this time by our friend Tier. Also his pictures.
OK here we go:

2 kg potato
5 onions
4 clovers of garlic
2-3 tbs of marjoram
2 tbs blac peeper
3-4 tbs salt
4 tbs flour
2 eggs
hog casing
15-20dkg smoked beacon ( optional, and recommended )

Grind potatoes on vegetable grinder.
Chop onions and fry on frying pan until it will be transparent, add garlic, pressed, add other spices.
Combine all, and stuff casings. (quite loose )
Bake in oven in 180 °C untill gold/brown.
My remark: You can also boil in water for +/- 25/30 minutes.

Just made a batch and about to stuff.

My first thoughts are this is too carroty for me. It may taste better once it's smoked and cooked. The pan test wasn't to my liking. BUT, the wife has raved over it! :shock:

We shall see. Pics of process and stuffing coming soon... Cooked pics will be sometime after that. Getting a bit late here and I need my beauty rest! :mrgreen:

Well, lets say I'm glad that I'm a carnivor! :lol:

I didn't get to smoke them last weekend and plan to do so on Saturday.

The basic patty test was ok, but not what I wanted. Now, as my vegetarian friend pointed out, I was looking for a taste that i am acoustomed to, meat. He will be my sampler on Saturday.

Pics of all work done will be posted then.

I don't think they will taste like meat but they might still taste good ? :roll:
