Oh my, Cream of Chanterelle soup on the hoof! Yum! I've only found chanterelles once here in the Lower Mainland. But that soup was one of the best things I've ever eaten.
I'm jealous.

is there an equivalent for the dex? Dextrose is glucose. Also called corn sugar (dextrose monohydrate) or grape sugar. It's readily available at home brewing supply stores. It's even sold by Amazon. :-) If you want to use table sugar instead, you could dissolve it in water and add a bit of vinegar,...

I also have that 5 lb. vertical stuffer. It's inexpensive and works great. I use 22/24 mm sheep casings from Stuffers (they're local to me). As you noticed, sheep casings are more delicate than hog casings but are easy enough to use if you just handle them with care. I use the recipe for Sage, Ginge...

Re: Sodium Erythorbate, Not just for sausages
J She retrieves a bag of Sodium Erythorbate, also marked ascorbic Surely not, for it is not ascorbate. It is also called sodium isoascorbate, though, as it is an isomer of ascorbate. In association with suitable food acids Sodium Erythorbate can delay the oxidation of fruits , vegetables, salads, f...

I think a javalina is the same thing as a wild pig only a little smaller animal, found in Texas I think. Javelina is a different species from a feral pig. It's also known as a collared peccary. Peccaries evolved in the New World, razorback hogs are an introducted species from the Old World. -- Chee...

Hi Red, Rob, I bought my no-name 11lb. stuffer from Princess Auto in Langford. Decent quality, the only thing that the crank is on the side rather than the rear. There was a discussion recently about what looks like same stuffer on the Polish WD site where all the experts criticized the design. So f...

Hardware for Canadians
Princess Auto is a Canadian hardware retail chan, selling tools, equipment and all kinds of mechanical odds & sods. I was in the Coquitlam, BC, Princess Auto yesterday. I was quite surprised to see they have home food processing equipment there! In particular, they have the same Kichener branded ele...

for $700 I expected a smoker that digitally displayed 160* to actually smoke the meat at that temp, not 185*. Did you consider the Bradley Digital Smoker ? I don't have one but I gather it's very well thought of, less money than the one you're currently having grief with and quite versatile, being ...

After some time I finally put 2 + 2 together and realised what it is. I actually thought that sodium nitrite and sodium nitrate were separate things altogether and that Prague Powder was (and is) some sort of colouring/flavouring agent that was purely optional. The same thing goes by various names:...

, so as soon as my smoking barrel is complete I'm going to do me a cold smokey bacon, without sodium nitrite! Or celery salt! And I might do it in my underpants under a full moon! :P Muahahaha! You know, Marty, we usually like to see pictures of the process. But I think I speak for the rest of the ...

I'm not sure whether to be alarmed or not by botulism. Here in New Zealand I have several choices of nitrite free, free range, organic pork products that I can buy from the supermarket. Hi Marty, welcome! Ross has already told you about the low levels of nitrite (N02) used to cure meat. Don't forge...
