Re: Frankfurts - never again

Four kilos is too much for me. I draw the line at 3 kg. That's the limit for my mixer and sausage stuffer. I've never heard of Adam's. Where are they? I've made a few different emulsified sausages. Wiener, Gelbwurst, Weißwurst, Leberkäse, Rügenwalder Teewurst, Emu sausage, Milzwurst, Rote Bratwurst...

Doesn't the size prohibit lighting these, and reduced lung capacity of the elderly…….😁

Re: Frankfurts - never again

Well, emulsified sausage always is a fair amount of work. To make it worthwhile, I make a larger batch, so I have to deal with all the clean-up only once. Here in Brisbane, good Frankfurter/Wiener are as rare as hens' teeth, so it's worth my while making them myself. Michi. Four kilos is a large ba...

Frankfurts - never again

Decided to make some pork frankfurts, what a pain they are to make !! The sheep casing is soooo delicate (especially for big fingers ☹️), the processing of the meat, the smoking to a precise temp, then the water temp to cook, just ain't worth the work ! I can buy not too bad frankfurts from a really...

Re: Greasy Salami

Turns out, the problem slowly resolved itself. It seems the neighbour overdosed the red wine. That considerably increased the drying time by bringing with it, not fat, but a yeasty film. That is now gone, the salami has resumed its drying, now white mould growing, in week 10.

Greasy Salami

We, the neighbour and I, made salami after using the chamber for dry ageing beef. Mine is Hungarian, his is Italian. I have made salami before, which was very successful, even though did not have the chamber then. I smoked mine, his is not. After the first week, the Italian is exuding what feels lik...

You understood it wrong Vtec, May I suggest that you communicated it wrong, rather than CW, and forum members also, understood it wrong ? Redzed has been a moderator for some years now. You send CW a message to "train" the "new" moderator. To do what ? How can such a message be misunderstood ? And ...

That appears to be a porky Bob.

Don't speak for others when you write " I doubt at this juncture many members can see your "point". Perhaps you can't, many can.

My dictionary defines Respect as - " to hold in esteem or honour " apparently at odds with yours.

At last VTec ! The new appointment might have been handled better no ? The other thing coming out of this hiccup is the depth of respect and affection for Chuckwagon.
Thanks for clearing this up,

Nope, I'm not needed at all. I'll feel a lot more comfortable where honor and loyalty are more in demand than just going along with the crowd. The silence is deafening, and I feel our mentor and dear friend has gone to greener pastures. I can no longer support or patronize this website, I feel in l...
