Trespade sausage stuffer

I had one sausage spice supplier tell me that the key to success on Ayshire bacon is to tumble both the loin and bacon to activate the Myocin which acts as binder when you roll the two together.

mapeline ?

I saw that recipe in the members recipe index but wasn't sure about it. Why use mapeline
( imitation maple flavoring) as well as real maple syrup. And why poach the links in 180 degree water before freezing?
Any thoughts?

hearty spice blend

Hi Redzed: Many thanks for posting those pages for me. I see reference to a hearty spice blend on page 42. Do you have that page? Also curious about the amount of cure called for. Either 15 gms of saltpeter or 90 gms of curing salt. If using cure # 1, how much do you suggest?
