I say a prayer every morning. Lord put your right hand on my shoulder to guide me and your left hand over my mouth. Only sometimes works. CW is my anchor in sausage making and seem like we lost it. Just floating around now. I just lost interest.

I like my sausages very garlicky, that's why I make my "old-time-farmers" sausages.
Guly'as I know you gave the recipe before and I lost it. Can you please give it again. I love garlic also. I have in the past used granulated garlic, as it says on the bottle. Maybe not, huh.

Graybeard keep your 1 generation it is great. 2nd generation has the top vent out the side. To me it does not vent as good. I built a chimney for it. As crusty 44 says, the smoke has to circulate.Image[/img]

Graybeard! When you can see the white fat to the outside, like in yours. The heat process was just right. I think they are great looking. Now for the taste. I have a masterbuilt smoker 2 generation and smoking for that length of time would be to much. All smokers are different, mine is to air tight....
