might not be "by the book" size but they look very tasty can i ask for clarification of your process. you said they going in for heavy smoke but then you say 5h later? did you smoke them for 5 hours or was that smoke for 2h and then baking for 3 to bring them to temperature and to dry them out a bit

thanks guys, mine turns out to be 12% not 11% i sort of worked it out last night backwards from what wasn't rubbed off and was able to confirm it today with manufacturer so i can go ahead with my batch :) i prefer cure #1 as well but what i had expired and that is what i got and really wanted to do ...

Hi Croc. There are only 2 abbatoirs East of Melbourne that kill pigs. Gathercoles at Carrum Downs and Gordyns at Sale. I have used Gordyns before but kill my pigs at home now. what is legal situation with picking culinary mushrooms in usa? I just discovered that in victoria/australia it is illegal to pick mushrooms in forest unless it is private land.

thanks guys and yes i did use sheep casings, i was expecting all sorts of problems as i been reading that they are a lot harder to work with than the pork casings but it was not hard at all, easy almost, saying that it was first time i used my vertical sausage filler that got here from ebay few week...
