Thanks for the clarification between smokin and cooking. I know alot of people use smokin as cooking.
It also makes me feel better because i routinely cook my sausage and bratwurst on my smoker at around 250 for an hour.

Very nice Sambal. After years of making sausage, not alot during the year. I finally bought a LEM vertical stuffer. What a difference. I still use my kitchen aid for grinding, but i dont get worn out pushing the mixture through the kithen aid anymore when stuffing.

Are we going to try and cold smoke? If so I just ordered an A-MAZE-N Pellet Smoker. From what I read this works very well and is inexpensive.
