Re: Champion Juicer for emulsifying hotdogs

Will any cold press juicer work the same? There's an Aobosi cold press on CL for $40. Don't have a food processor and this looks easier to use (no ice?). Thanks

I actually own the Inkbird 308 that I use for beer fermentation. Guess I don't see how to control the temp in a MES with this. But then I'm not the brightest bulb in the pack. :)

Bob K wrote:As far as temp control on any of the electric smokers, there are lots of good plug and play controllers available now in the 20-30$$ range...that are accurate. Set at any temp you desire.
Can you expand on this a bit more? I have a MES 40 and would like better temp control. Thanks.

Thanks. Everyone thought is was good. One Philly old timer thought maybe a little tarter. Not knowing much about ECA, I wouldn't know how much to add to make it "a little" more tart. Definitely going to do this again. Maybe I'll try the fermented version if I can figure it out.

What temp do you set yours at? The most common house setting is 0F, right? Just curious  .

Ended up with two chubs. Sliced the smaller one already. Seems ok. The vac bag sprung a small leak while poaching. Big one was ok. Having a cup of coffee to contemplate on the finished product and any future tweaks. Down to the boozer this afternoon to pass out some to my yankee friends (living in T...

Thanks for all the help. Hope everyone had a good New Years. Started 2019 off with a nice breakfast of eggs, Taylor Ham (I'm from north Jersey, lol) and coffee. Must say I'm not at all disappointed with the ham. Not quite as salty and tart as store bought, but, that could be a good thing. Any other ...

OK, thanks. My concern now is I have to leave the house and the poaching temp is 137. Was hoping I could take them out and finish poaching tomorrow. Yes/no?

Last couple of questions. do you think it's best to leave the fibrous casing on or off when vacuum sealing for storage. Lastly, if I can't be around to bring the rolls to temp in the water bath, is it ok to take them out and finish to temp tomorrow? Thanks again.

Hi Bob, if you used smoke bacon dont bother smoking again. As Bob K said, it dries it out a little more than the real Taylor Ham. You may also want to vac seal them before you poach to seal in the juices that come out during poaching. Our batch made it to all of the Giants tail gates this season an...
