Re: Kielbasa Lisiecka\Kielbasa Czosnkowa - Garlic Sausage

I'm still watching, but super busy with non-sausage things at the moment. Hoping life can settle down so I can get back on this wagon. But I have to admit there's just a real slowing down by a lot of the usual posters

Re: Clip Rings

I use this https://www.sausagemaker.com/product/bag-sealer/. May not be as good as hog rings, but I haven't had many complaints

Re: Braunschweiger

This recipe came from Marianski’s German Sausage book, but it is identical to the one on https://www.meatsandsausages.com/sausage-recipes/braunschweiger . I used venison liver and the only reason I deviated from 50:50 was because my packages of meat weighed what they did, and I didn’t think the devi...

Re: Anybody experiment with low salt sausages?

I haven't ventured down to 1% but I'm making a lot of fresh or cooked sausages between 1.5 and 2.0%, many falling around 1.6%. I have not made any uncooked dry sausage so far, but I know that salt percentage becomes far more important to safety with the raw meats. Again, I do hope to "finally" make ...

Re: Kiełbasa Serdelowa z Łosiną - Serdelowa Sausage with Moose Meat

Hi Chris, just wondering if you followed your standard procedure of curing the meats ahead of time? If not, any particular reason why not? Thanks, Scott

Re: Frankfurter-All Beef

Greetings jym571 - 12° does seem to be pushing it further than I wanted to go, but I googled "what temp does meat emulsion break" and I know there are many references out there including our site. Here is a reference... https://meatsci.osu.edu/node/130 . I'm sure other members can give you better in...

Re: Frankfurter-All Beef

Sure, sorry for the delayed response. I'm not sure what my final temp was but it was below 48°F. To give an idea, the meat farce was fully ground through the 1/8 inch plate and frozen the night before. I set it out on the counter in the morning to soften things up. The meat never really stuck into a...

Re: cleaning equipment

I am a beer brewer, like probably many of you. I have used multiple products over the many years including all of those discussed here and with proper use have seen very few issues on my beer. The few times that I have I can attribute to sloppiness. I think the same goes with sausage. If you are goi...

Frankfurter-All Beef

Finally finished my all beef hotdogs. Marianski recipe https://www.meatsandsausages.com/sausage-recipes/cooked/frankfurter-beef . Everything went well in this batch and though I think I prefer pork franks, like I said in the Kosher Beef sausage post, I had a 30 pound beef clod that became Kosher sau...

Re: Kosher Beef Sausage

Fatboyz - yes it was the Marianski recipe with no real changes other than perhaps a bit rougher on the meat and of course the poaching. https://www.meatsandsausages.com/sausage-recipes/kosher-beef-sausage Chris - thanks for the insights but I locked myself into the two hour time specified in Marians...

Kosher Beef Sausage

Last week I fell into a good deal on beef. I bought a 30 lb. shoulder clod at $2.09 per pound. I did my best to butcher it and did manage to pull out both flat iron steaks. The rest of it looked like it could be used for roasts, London Broil, and stew or grind. With most of the meat I decided to mak...

Re: Münchner Weisswurst

I have used Thomy and Lowensenf. Both are available to me in Atlanta. But here's another option https://www.daringgourmet.com/homemade-traditional-bavarian-sweet-mustard-bayerischer-suesser-senf/ Kimberly is a stickler to accuracy on her recipes, I haven't made her version but I can vouch for her re...
