And if I remember corect I run out of Dextrose but I add more sugar
Can this be the problem?

Hi Im sorry if i post in wrong location I made salami milano for second time ( first time end perfect) The second time salami didn't dry for months when I cut it was brown on color instead of red/ pink taste bad and smell sour Any one have idea what I did wrong ??
