Pickled pigs feet

I picked up two packages of split pigs feet sometime ago. I used Stan's quick recipe to pickle them. If you like PPF this is a good recipe. Since they were split I did not skin the feet. They taste good.

Put my second batch of kraut in jars yesterday and into the refrigerator. Two heads of cabbage, a one gallon crock, two jars of sauerkraut. This time the salt was just right and the kraut is great. I like all the Kimchi types I have tasted. My wife's favorite is spring Kimchi as it is very mild. Wish I could remember what was in it. Will have to do a search.

two_MN_kids, How is the kraut coming?

Today I started a small batch, 400g, of brussel sprouts. 2.5% salt and 3 cups water with 1 Tbs salt to cover. I left the heads whole.

At the price of frying oil I would have to admonish anyone working for me who put bacon in a deep fryer. Animal fat burns at a much lower heat than the vegetable frying oils. There is a lack of knowledge in the workers in food service industry for sure.
