Tough collagen casings?

Hi
I made some bear pepperoni sticks with 20mm collagen casings. I smoked them till 150 f internal temp, took about 6 hrs. They tasted great but the casings were a bit on the chewy side. Is that normal for these casings? It was the first time I used them.

Thanks
Toby

Those look awesome. I made some bear pepperoni sticks with the collagen casings. If thats what you used, do you find them tough? They are supposed to be eaten, but mine were a bit chewy.

Thanks

I made my own a-maze-n smoker, I wanted longer burn times so this one is 16x 10 x 2 inches. Burns for about a day without being maintained . I use the traeger pellets too.
Good luck

Circulation or extraction fan for curing chamber

Hi So Im looking at installing a fan in my modified fridge/curing chamber. Im torn between extraction or just circulation. It will be just an 80mm computer fan. For extraction I was liking the idea of having it on a timer so it only came on for 15 mins a day, fan located top of the fridge and vent o...

But thanks for the link. I was looking for what would be used in Cervlat and other similar salamis so I got an answer there.

Hi Chris Yeah I have talked to the Stuffers people a few times and I get the feeling the women there are just receptionists ( no disrespect intended). I got that list from Stephan at Halfords in Edmonton. They just started carrying the full line of Mondostart, seems like their prices are better than...

Which mondostart culture similar to bactoferm T-SPX

Hi, New to the forum, but wow this site is amazing. You guys rock. My question is, I can get Mondostart easily but not Bactoferm cultures. But Im unsure which one could be used in place of Bactoferm T-SPX? Or if someone could give me the equivalent for all of them that would be great. MondoStart 06 ...
