I date everything that I put in the freezer AND I label it with what it is! I the past I had to let my nose try and tell me what I had defrosted... Lots of pot luck suppers in those days! :shock:

Sprayed some Pam on my hi-temp gloves Ray - that's a good idea. It's got to help getting the meat off the gloves -- any tips for getting the gloves off the hands? Wow, wish I were closer! Sounds like a good bunch of meats coming up! To substitute for a fat cap, in the past I've laid a lot of bacon on top to try and assist, but it didn't work too well. Sorry folks! While this batch of cheese and almonds were cooking I received a phone call letting me know that a good friend had been killed in an accident. My bride took over the packaging of the cheese and almonds. Once we open the vac packs, ill post pics and provide details of the prep and smoke....
