BTW, couple weeks ago I brined and sort of half grilled / half smoked some salmon. It was excellent! Salmon is so great on the grill, but can dry out quickly as you said. The brine made a huge difference in the final product, and much more forgiving along the way. May we have more salmon years like ...

Redzed - I will let you know how it comes out, positive or negative. :mrgreen: I am not going to smoke it at all, just cure it. I don't have a good way of cold smoking at this point, though I did finally break down and ordered an Amaz-n smoker today!

Sockeye fillets are a lot firmer than coho, making thin slices possible and the deep red colour is great in presentation. I am glad to hear this! Thanks for the recipe - I am going to have to try it. I also enthused about the conyeagerspice link. Free shipping for orders over $35 - that's great! I have to buy all my sausage ingredients online, and the shipping really hurts. You're lucky to live so near suppliers.

For an electric burner, I've seen tabletop types for about $15. You could get one for even less I suppose at a used store. Just plug in and go.

Kevin - thanks. That's what I was hoping you would say! I don't really want to buy the hi-temp stuff. Just another thing to mail away for, plus I don't know what's in it. One of the challenges of sausage making is to keep postage costs down! We all ought to encourage our local beer/winemaking supply...

It could not hurt to try, just remember you need a way for air to get in and out. Some people adjust their ventilation holes with duct tape on the outside of the fridge. Since humidity is harder to control (for me at least) than temperature, I'd recommend testing your new setup for a couple of weeks...
