I've never used either, and I probably won't. The main reason I won't is the fact that Instacure, pink salt, etc., are marketed with a KNOWN quantity of nitrite per gram. Whereas the celery powder and other powders out there from vegetables/fruits are NOT guaranteed to have a specific amount. If you...

However, when it thaws, be sure to include the exudate with the sausage. There's all kinds of things we need in that liquid. Amen Brother, PLEASE preach it again!!!! So many times when making sausage and other things with folks I hear this... "NO, rinse off the blood and gunk, it's bad!!" No, it's ...

The building looks really rustic, looks like it belongs in a French province. Bet it makes you smile every time you look at it.
I love it.

I agree 100%!

Great looking setup, looking forward to seeing some meat come out of it.

Wife brought home 2 butts and a large porkloin

So, as the title says, I'm sitting here with an 8 pound pork loin and 2 butts that weigh 16 pounds combined! I know, not a BAD thing, but she said make something different! She loves "Canadian bacon" so I think I'll cure the loin and then crust it with cracked black pepper corns prior to a little sm...

HamnCheese,

If the body and the handle are in good shape, you can play with the plates and knife and not be out too much if you have to replace them.

What size and style of blade? Pics?

Chorizo is HARD to beat! Love it in eggs like the Duck does and my "BS" ( love that one! ) tends to crave it at least one Sunday out of the month. Ray, you need to try it! The recipe on this site is a good one to start with and chorizo loves to be experimented with as well. Hey el Ducko, where...

Glad all of you find it interesting. I did notice that my video skills lack a bit and I don't always get the piece I'm talking about in the shot, but, this was my first attempt at this. Fun to do as well! For those that are having trouble with the Photobucket site, I've also uploaded the videos to Y...

Ground a chuck last night and it rocked! Not bad for a $5.00 investment!

I'm not the best videographer, but I gave it a shot!  In the following videos I show how I go about sharpening the grinder knife and truing up the grinder plates as well. Let me know what you think and if you have any questions. http://i539.photobucket.com/albums/ff360/CrankyBuzzard/th...

Advantages: Easier to put on and remove from a grinder. If you do your own sharpening by hand it's easier to handle the plate as you run it across a flat surface. Disadvantages: 1. You can only use one side, then you need to sharpen. In a hubless, you can use both sides (with matching blades). 2. H...

Where did that question concerning aluminum come from? I have several aluminum baking sheets that get used to bake bread at 425°F and I used to weld aluminum with no concern about any fumes. Aluminum foil is a standard for about a hundred cooking uses. Some people even use aluminum foil to wrap aro...
