Recently got:

Amaz'n smoker
Kirby bucket mixer
LEM 5 lb vertical stuffer

Very pleased with all of them. Needless to say, I am now broke!

Next will be a remote thermometer with an alarm.

Someday, a deli slicer. But I don't really need one, so it can wait.

I looked at the site, but it seems you have to buy a whole bucket of hanks to get that price. Am I getting it wrong?

Won't ice cubes hurts a grinder or quickly dull the blades? Thought I had heard that.

Warm / tepid water is fine. For beef rounds, add a splash of vinegar and rinse thoroughly. Helps with the odor.

Hey Blackriver. Following standard practice, I put my grinder parts in the freezer for an hour or so before I grind. When I am doing larger batches, and double grinds, it has to sit out for quite a while, and of course it warms up just sitting there, not to mention during the grinding process. So ev...

In the lat 60s, early 70s my grandfather used to take my dad, brother, cousin and I out of Half Moon Bay on party boats going for rock fish. We would catch 2 and 3 at a time and fill whole gunny sacks up with them. Good times! While I never landed any beautiful salmon like that, your picture with th...

Kevin - thanks for sharing your helpful notes. I am using the Amazn in a water smoker without the water. There is a lot of air space at the bottom. For the second go round I need to monitor what's happening along the way. Might have to come up with some jerry-rigged way to reduce the air flow.

Ross that makes perfect sense - thanks! Where I live it usually gets into the 50s each night, so I can cold smoke then.

First cold smoking attempt - advice needed

So I finally bought an Amazn smoker and lit 'er up with a load of pellets. It faithfully produced a lovely thin stream of smoke for hours, though for how many hours I don't know because I fell asleep. I expected to get 11 hours, but I am guessing I got maybe half that. Too much draft probably. But t...
