ok will make some with natural casing use the recipes on the home page and ferment as stated and dry in the wine fridge thks heaps

ok there in the fridge nice red colour no smell also if i had used collagen casing would i dry them in the wine fridge or normal fridge

just one more question have fermented for 3 days in wine fridge i had to turn it of was running to cold so i put frozen bottle of water in and it did the trick changed it every 12 hrs i used umai bags can i just leave them in the wine fridge and turn it back on :lol: temp range avavable is 18c to 12...

right ho just got a wine fridge will run at 19c got biostart sprint :mrgreen: 50 raps going to give it a go will let u know how it goes :mrgreen:

thks all will i be right to cure at my temp for the 2 to 3 days before going in the fridge also have you used these bags any tips would be good i have got some coming

hi just wondering if i need a chamber temp here is 80f to 70f with 80% humidy it will get a little bit colder in the coming months but not much thks :?:

thks bob so the recipes on the home page that use cure no 2 have 1%nitrate and 6.25% nitrite is that correct ?

it says on the packet 1 level tea spoon will do 2.2 kg of meat i brought it from back 2 basics in australia where they get it from i do not know but you are right about confusing i am now surely some one out there has a 250g packet of cure no2 and can tell me if it contains 1%nitrate and 6.25 %nitri...

hi every one just about ready to make my first dry salami have got cure no 2 i just want to know if it the same as you use over there it has sodium nitrate[1%] sodium nitrite [6.25%] thks from lance

hi crusty can i use a standard wine fridge i think it will run at 19c i am going to use 1 of the dry sausage recipes on this site but the only starter culture i can get is the opti sprint also can u tell me how do i no when there ready to eat do they lose 30' of there weight thks lance :?:

hi bob it says absolute product safty due to the fast and controlled ph value at normal ripping temp high temp above 24c not necessary colour develpment with in 24 hrs garenteed perfect results with in 7 days please excuse spelling and typing :grin:
