Ray, why not apply your skills to building what you want and recuit an electrician friend to build the controls. You could frame it up and cover the inside with cement board tile backer, insulate the stud bays and apply whatever weather board you liked. These folks can supply the electronics. http:/...

PS Seasoning Smokers

It appears thing aren't going to work out with the Sausage Maker Inc and that I'll be in the market for a new smokehouse. I see the Cabelas Pro Series 50 & 100 smokers are made by PS Seasonings right here in America. I'm wondering if anyone has had some experience with these smokers, or knows someon...

In the lat 60s, early 70s my grandfather used to take my dad, brother, cousin and I out of Half Moon Bay on party boats going for rock fish. We would catch 2 and 3 at a time and fill whole gunny sacks up with them. Good times! While I never landed any beautiful salmon like that, your picture with t...

My wife corrected me, 1/2 cup of salt, whole bottle of chardonney. That was my fish of a lifetime, caught in Half Moon Bay, Ca. off Tennis-Shoe rock near Martin's Beach in 51' of water, mooching 42' down. Used a 8'6" uglystik with 14lb Ironthread and a 12lb mono leader, took 1 hour and 10 minutes to...

I've been using this recipe for about 35 years. The Beefeaters goes in a glass with a few ice cubes and a squeeze of lemon to be imbibed while the salmon is smoking. Air-dry with fan until proper pellicile is formed, then a nice honey baste right before going into the smoker. 16 lb minimum to qualif...

Terrific! And your work area looks great. Have you made any javalina sausage? I've made quite a bit of wild hog sausage, mostly Italian sausage. I think a javalina is the same thing as a wild pig only a little smaller animal, found in Texas I think. I'll cut the wild hog meat with anywhere from 30 ...

But Ray... where did the "saw horse" come from? When I started my apprenticeship in the financial district in SF in 1969 I was trained by all old country Italian carpenters. After a month of shovel work and nailing off sub-floor by hand to toughen my hands they taught me how to build a proper sawho...

Ray, Just imagine if you live in the EU, where governments in the northern region plunder private retirement funds to prop up banks and governments in the southern region. See how diplomatic I am, no longer am I mentioning names. I just love your photo's, keep up the hunting and fishing. I will sta...

Ray , I hate to be a kill joy but in 1972 $3.75 per hour were pretty good wages. Now forty years later it is just over half of minamum wage.I can't help but think that the next 30 or 40 years will do the same thing to a dollar. Pension income is tenuous at best. With modern health care you need to ...

I worked as a union carpenter in the San Francisco bay area from 1969 to 2000 when my back would take no more. I learned to use a computer and then found gainful employment in a large construction company office as a estimator / project manager. I retired in 2007, comfortably, and am looking forward...

Jeez! 700 bucks for a smoker? I think that I need to apply my self to this need. Just need to do enough work for hire to be able to afford the toys needed. I sold my boat and jeep last year and forked over the $35K to my wife, toys I won't be getting back, she thought the smoker was a good trade. I...

Thanks for the welcome CW! I plan on introducing myself and doing some posting very soon, I've been very balled up with the folks from the Sausage Maker Inc. I've been making my own fresh susage for a few years now and decided it was time to start smoking some of it. I ordered their 20lb digital mod...
