They would be better hanging as they drip and you want them to start losing moisture. Simple set up . This is Redzeds. Ok, bummer that they should be hanging. However, the cooler would not work for me as the ambient temps inside or out exceed the top temps for fermentation. Our house doesn't get an...

Bottom line is the weight loss will slow as it drys...may take longer than anticipated , but its not too long, 60 days is reasonable, at 90 the flavor will have improved. Ah good. That makes me feel much better. but that will require having the chamber empty for fermentation, What you really...

Those Lonzinos look lonely  Yes they do. I want to do a saucisson sec next (likely Saucisson de L'Ardeche) but that will require having the chamber empty for fermentation, etc. This brings me to my next question... Ok, so in real life, I'm an estimator for oil and gas. I deal with numbers, fo...

I suspect this will backfire spectacularly for them as a business model. $100 a year to share photos on a site is batshit crazy. The thing is, $100 would be crazy, but you still can't 3rd party share with that plan. You have to upgrade to the $399.99/yr package to get 3rd party sharing. Now THAT is...

My humidity always heads to 50% and stays there if my humidifier runs out of water. Seems the frost free is very efficient at removing water when it's running. At any rate, I got a refund from the seller for the broken humidifier, and they told me to not bother shipping it back. SO! Out comes the sc...

Lecker!! You can also simmer (not boil!!) them in beer +onions + Butter and finish on the grill. Oh yea and on the roll you also need some homemade Kraut to go with that stone ground mustard Casings easy - switch to some 30-35 hog casings. A lot less expensive and much easier to use. Hmmmm. Homemad...

Made some Nürnberger Bratwürste

Made ~19lbs/9kg of those little buggers yesterday. Linked them this morning and vac-sealed for freezing. Holy mother of God, sheep casings are an incredible pain in the butt. I'm pretty sure my struggle with them added about 3 hours to the process. At any rate, they turned out GREAT. Used a ...

So in this week's loss report, one is at 29%, the other is at 27%. I figure I've got at least 2 more weeks to go. They smell great, can't wait to get into one. Flipping them around hasn't done much for mold growth on the other side. I'm still maintaining 80% humidity. So I ordered one of the "drop" ...

I have a Hanna Instruments pHep 2 pH meter, will that work for sausages? I haven't used it in forever, so I'll need to rehydrate the probe. It will work but I would definitely calibrate it, or test for accuracy. The electrodes usually only last 1-2 years....if well cared for Hrum. Well, this has to...

Welcome Yohann! Just a thought on your humidifier. Since it is located outside the chamber, blowing in, the chamber needs to have an exhaust hole in it, otherwise it probably won't get a whole lot of flow into the chamber...hard to pump air in when it has no place to go! The best solution is to have...

Looks like the Gin and wine evaporated too! Shhhhhhh!!!! Actually (sadly?) they were just filled with water. I put them up higher on the door with the though that cold falls so that may help even the temps? Also, I have admitted defeat with my home-made ultrasonic humidifier. It just hold...
