Re: Stefans kielbasa
Inspirational as usual! I've been planning on making a fair amount of stuff for Christmas gifts and this gives me some good ideas. I have several deer in the cooler and a good bit of pork I think I might trying making some things along these lines but also using some venison as well.

Re: Venison Landjaeger
They are pushing the limits pretty hard these days and doing some mind blowing stuff. I've always been skeptical of ice because you might climb something one day and the next day it may be gone but it does look like fun and I'm sure you are pretty adept at reading the weather and the ice conditions....

Impressive! Love the press. Climbing? Are you into technical rock climbing? Yes technical rock and ice. It's ice time here now. I have been a member of our technical Mountain Rescue team for almost 30 years. https://i.imgur.com/NL9z2Yi.jpg https://i.imgur.com/Q6EoLQc.jpg Cool! Nice waterfall. Remin...

Re: Learning to speak Polish
I a few of them look familiar. I know I watched the one with the guy with the white cap and then Film VII which had a sausage that was in the shape of a ball about the size of a baseball. Don't know what that one is but it looked pretty interesting. It was hard watching them because I couldn't under...

Re: Sundried... Salami?
You are right. Nothing ventured nothing gained. Every region has its own methods of doing things so maybe he knows something worth learning. Seems I recall reading where regions which have high heat often add vinegar to their mince to bypass the need for fermentation step. I'd be curious if this is ...

Learning to speak Polish
Do many of you speak Polish? If so, I'm envious of you and wonder how hard is it to learn? Reason I say this is I found a vein of wonderful information on YouTube last night and spent a few hours watching these videos. (type in Krakowska) Most, if not all were in Polish and I couldn't understand a w...

Re: Dry aging greenhorn questions
Sorry but I think I have more questions than answers. Don't understand the liquid discharge you are referring to. I ferment in a warm high humid environment so there is a lot of moisture during this process but I'm not looking for discharge from the meat. What's your pH? Also might help if you tell ...

Re: Sundried... Salami?
I would think if they dried to fast you'd get case hardening and the centers would rot. But like Redzed said, anything is possible and thinking on these lines I'm wondering if you have high humidity there. If so, I've noticed when I dry salami in the barn sometimes the temperatures get higher than i...

That looks good. Did you find the cloth casings allowed for more smokey flavor or not?
