This may have been mentioned but why not just go to the local butcher shop and ask them where they get their supplies from. Most suppliers carry a full line from high to low end products.

Burgers

We here have a community BBQ once a year when all of the neighbors get together if for no other reason than to eat and drink a lot. Everyone brings a BBQ and after that it's sort of a free for all. People always seem to migrate towards my BBQ because they say my burgers taste better and they ask wha...

Creosote

I don't know if this has been discussed but I see a lot of comments on what types of wood to use, but very little if anything on the preparation of that wood. For instance does anyone bother to bark the wood they use? Seeing that fully 90% of the creosote in trees is found in the bark and creosote i...

randalleg, Smoke houses can be made of almost anything, Mine is built out of fieldstone but as I live on rocky land I use what I got. I would venture that there are more smoke houses made out of plywood than any other material. Cripes my father in law uses an old outhouse for smoking meat  but...

squish fix

Ducko The casting on my stuffer are really quite good as far as inside smoothness goes it was just really the undersized plunger plate that sucked big time. Having been a pattern maker for some thirty odd years I suppose that I could have whipped up a plunger pattern fairly quickly and had a new one...

Stuffing without Squish

Got a better idea? :?: I'd love to hear it. I have much that same type of stuffer that I use for small batches of sausage and of course it has or I should say had the same type of problem with the squish. What I did was to first flatten out the face of the plunger with a grinder then I applied a fo...

There's an Emeril Lagasse version with vodka. ...doesn't seem to change the taste much, tho. I prefer to consume some vodka, then the fish, then more vodka. It would probably work with Rye Whiskey as well or Scotch or Schnapps or Tequila or Rum white or dark or Beer even. Yeah it would work with be...

...looks an awful lot like salt curing, doesn't it?[/quote]
It does and it also reads a lot like the way that the Scandinavians up here and in Minnesota do craw-fish, cept for the liquid smoke and the addition of lots of vinegar .

Re: Ice Fishing, Gravlax, and alcohol

A Canadian friend once explained to me that ice fishing is much safer than other types of fishing, particularly in polluted waters. "Each time you pull a fish out of the water, you stick it head-down in a snow bank," sez he. "Then, when sunset nears, as it gets colder and you're packing up to leave...

It makes it easier for the farmer to know if he has a new calf in his herd. Ross, that well might apply in some places but here farmers know if they have a new calf in the herd tags or no tags as almost all of the caving is done in February or March when the cattle are still in the corral or barn f...
