Hey Ross, That's great! I've sent a note to my supplier - will see what she says. It may be a while before she responds. This is a busy time on the farm. Ray, there is a follow up video - part 2 - here: https://www.youtube.com/watch?v=yKkG80YHutc Excellent instructions for shaping and slashing a Fre...

Hey Ross,

I think I might be able to do something on this - but I am leaving for ten days or so and won't be able to reach the potential supplier until I return....Stay tuned! This could be a new adventure!

There is something VERY special about freshly ground flour - I'm incredibly jealous. The fresh ground I can get here is $4 a pound - and that's with the friendly face discount!

Hi Ray,

Here's an interesting video on kneading that might inspire you to try potato bread without the mixer....

https://www.youtube.com/watch?v=qGLDBZys8pw

I made bread for years before I owned a stand mixer - and still do when I just want a peaceful day in the kitchen.

"Jibe Ho!"

Hi Charlie, It's a tin plated Chop-Rite #10 with two plates that looks like it was never used. Unfortunately, I left my camera in Frederick this weekend (little guy testing for his red belt) and won't be getting it back for a week or so. But I'll post pics when I do. Meanwhile, I'm going to give you...

Thanks so much for spending the time to video the process, Charlie. I found a hand crank grinder for 20$ that needs some rehab and this is just the ticket! (Not as good as your $5 deal, but close enough for government work.)

Spammy

I second Jan's motion. How about we just agree to call the post 'spam' and send him/her packing? There is little doubt in my mind that this person never intended to post even one more comment - came just to stir things up. Luckily (as has already been mentioned) there has been no harm done to CW's r...

Hi Gang, We're due to make our annual trip to a local Mennonite farm for the cooking of the scrapple. The father is a butcher who processes beef and venison, so they make two versions every year. They cook the bones and scraps that he has saved and frozen over the year in a giant cast iron pot over ...

Hey Red, Thanks for your input. I was a little worried about using the Chinese cabbage precisely because it is so light textured. However, since my total investment was a whopping $1 and because I had read that it is possible to 'sour' just about anything I gave it a try. The first batch this year w...
