BTW, couple weeks ago I brined and sort of half grilled / half smoked some salmon. It was excellent! Salmon is so great on the grill, but can dry out quickly as you said. Sockeye fillets are a lot firmer than coho, making thin slices possible and the deep red colour is great in presentation. I am glad to hear this! Kevin - thanks. That's what I was hoping you would say! I don't really want to buy the hi-temp stuff. Just another thing to mail away for, plus I don't know what's in it. It could not hurt to try, just remember you need a way for air to get in and out. Some people adjust their ventilation holes with duct tape on the outside of the fridge. Since humidity is harder to control (for me at least) than temperature, I'd recommend testing your new setup for a couple of weeks...
