Re: [USA] Chuckwagon's Canadian Bacon

Did my first Canadian Bacon yesterday using CW's recipe but tweaked just a bit. Had a 10 lb pork loin brined for 5 days. At the fifth day rinsed and soaked in cold water for an hour. Pat dry and tied up lion. Into the smoker for 1 hour at 130 with no smoke.. Gradually bump up to 150 for 5 hours with...

That looks amazing!
I remember about 40 years ago living in Flushing, New York my co workers and I use to get sandwiches on Friday at an Italian deli. They had hard salami with olive with pimento. It was soooooooo good. Haven't seen it since.

Re: Fermentation Chambers

Hey gang! I was thinking about using one chamber to do both until I came upon this a few weeks back. While checking out other topics on here I saw a member using a dishwasher for a smoker and I said, that would be perfect for a fermentation chamber. My question on this approach is does it need a air...

Re: Taylor's Ham (aka Pork Roll)

Butterbean , thanks for the reply! The poach may have been too hot. It was 160 before I put them in and bumped up the heat while they poached. Plus they shrunk when I pulled them. Out of the smoker they looked great. Bob K , thanks for the reply. Yes, I used pork belly. I remember read you said if ...

Re: Taylor's Ham (aka Pork Roll)

Hey gang! I hope I'm posting this in the right area. I figured it's Taylor Ham so I'd post here instead of starting another thread. I've been lurking around the past month doing a lot of reading and came across this and said, Bob, you have to make this. After ordering stuffs, I got the meats, cut an...
