More of a recipe from close to home

Early this fall I filled some bell peppers with chaurice sausage and froze them for the future. Tonight I fixed a couple for supper. For a side I peeled and cut a sweet potato and boiled it until tender and drained it. Then I chopped an onion and about a quarter of an orange and added that to the sweet potato with a tablespoon of sugar and a touch of molassas, a bit of salt and pepper and continued to cook it until the onion was translucent and the orange peel was tender. I had not before combined onion and sweet potato but it is very good with orange and a bit of sugar. I added no fat.
